Xi Yan

It was lyn's mum's birthday. And the filial kids decided to treat her to dinner at Xi Yan. It is a 3 months long waiting list, this proves how popular this place is. I was asked to fill up the additional seat as there was a minimum reservation requirement (for 6). I read about this place and wanted to make a tasting trip, but realize I will probably never have a chance. Boy was I glad I had to fill in, the experience was...ORGASMIC!

The day finally arrived. We punctually arrived at 38A Criag Road as requested by the restaurant. I gingerly skipped up the stairs lit with candles. My stomach was squealing in anticipation(also because I ate a light lunch). We were welcomed with a red board with the name of the place written in gold.
We stepped into a area filled with 5 tables (Each table seats 10-12 people) only. I sat down and stared at this little menu infront of me. No choices were given, the menu just plainly wrote the 12 course feast we were about to receive. The name of the dishes never gave too much information of the dish, but did not give any flowery description. The jasmine tea served was very fragant, very few places give such quality tea.
King crab & sashimi salad with 2 sauces
The appetizer was placed on the lazy suzy and before I could tuck in, the waiter went on to explain how the dish was done, highlighted the unique area of the dish and suggested how to consume our dinner. The waiter took a little time to get use to as he spoke with a little fake accent.
2 sauces, the one on the left is the mint sauce and the one on the far right is the balacan sauce. The middle is the usual wasabi. The mint sauce is THE BOMB. It went really well with the sashimi. Infact it was so good, I did not even bother with the wasabi. The balacan sauce was a little too overpowering for my liking. The sashimi was very fresh and the greens were tangy and tasty.

The executive chef (very young and down to earth guy) came out later to have a chat with us. He even told us the mint sauce was made of fish sauce, calamansi juice, sugar, a pinch of salt, some melted butter, fresh mint leaves blended together. How about that? No secret at all.

Japanese tomatoes in sesame sauce
This dish has my vote for the best dish of the night. The huge tomatoes were flown in from Japan and dressed in sesame sauce. The sauce made up of sesame oil, sesame seeds and some wasabi. The combination was perfect. Not too overpowering sesame taste yet with a refreshing feel from the tomatoes. You can taste the slight wasabi lingering in your tongue.
Cold Tofu Pork Floss
This is a simple yet delectable dish. The silky soft tofu was fl was covered with a layer of fried shallots, pork floss and topped with salted egg yolk. The sauce main ingredients were light soya sauce and sesame oil.

The waiter informed us the use of red fermented bean curd from Hong Kong (the other kind is salty). He added that this was the last of the appetizer. That gave me a shock, I mean after 4 dish and u tell me I am still at the appetizer?!? Each one took 2-3 pieces and the dish was gone in less than 5 mins. The bean curd was wrapped around the oyster and fried, giving it the soft on the inside, crispy on the outside (which by the way is how a lot of the dishes are done here). A really interesting mixture of sweetness and oyster taste. Great way to end the starters.


Ginger balacan roasted chicken
This look like the typical dish served at a Chinese dinner. The waiter emphasised that the chicken was tender on the inside and crispy on the outside. The chicken was marinated with balacan and accompanied by a home made Thai sauce. I thought the chicken was not was juicy, but the crispy skin was done just nice. The balacan flavour was somewhat missing, got to try very hard to get the marination. But the Thai sauce was great. The chef really know his sauces!


Salivating Pork
The zhao pai cai (famous dish) comes in mild, medium or spicy. The waiter suggested medium as some people even think that is too hot to handle. I was a little surprise lyn's family followed his advice as the are a family who love their chili. True enough, it was not spicy to us.

This dish came in 3 distinct parts. Century eggs, pork boiled in ginger and Japanese yam noodles. The sauce was a mixture of chili oil, soy sauce, sesame sauce, peanuts and sesame seeds were added for texture. The sauce had a tinge of spiciness with light saltiness. It complimented well with the springy noodles and simple yet tender port. The century egg helped to neutralise the taste, such that every mouthful was a new experience. I really like that noodles, probably could eat it with the sauce only.

We are halfway done with the dinner! I am 3/4 filled. I want to add that by this point, I felt there was too much sesame in the full course of dinner. I like sesame, infact I add it to my maggi noodles. But the constant taste of it becomes a little numbing.
Fried Lemongrass shrimp paste grouper
The waiter mentioned that this is a variation of the usual shrimp paste chicken and stressed that the fish was very fresh, so fresh it came to the restaurant alive. I was flabbergasted when he mentioned that as I stared at the fish. Why did they fry a fresh fish? The reason given was 60% of the nutrients will be lost if they steam the fish.

The fish was indeed very fresh. I like the light taste of the shrimp paste and crisp skin (Yet another soft on the inside, crispy on the outside). This dish was done perfectly, you can taste the fish at its natural goodness without the fishy smell. The sides of pomelo mix with onions and tangy lime was brilliant.


Crab roe glutinous rice.
This is the last main course. I did not find anything special about the dish. The rice was tasty but the crab meat was a little too dry for my liking. But then again, it is not the crab but the crab roe. Let me tell you, the crab roe was in abundance. Thick and bright orange. This dish is good when you mix all together and eat.
Fruit intermezzon in plum sauce
This was done to clear the palates like French cusines. Really interesting idea to soak the fruits in plum sauce. It was a nice break as I was about to burst! Very refreshing dish!


Coconut Chicken Soup
The waiter served each of us a bowl of chicken soup and introduce it to us as.....
"Here is the coconut chicken soup"

The shortest introduction of the night. A little too sweet for my liking, probably because of the coconut. But still it is good, what is a meal without soup right?

Young and old happy news
This is probably the most cryptic dish name. We were all guessing what it will be. It turned out to be baby kailan with raddish. The simplicity of the dish probably caught us off guard. The explanation given was when the old (raddish) meets the young (baby kailan), it signifies a reunion, so its happy news.

Simple greens, stir fired and filled with the flavours. But I thought it was a little too salty.

Dragon fruit sorbet
The dessert was sorbet made of red dragon fruit sprinkled with diced white dragon fruit. I like white dragon fruit because it has a subtle sweetness to it. But the red dragon fruit is an acquired taste which even I myself have not taken to. It was still an interesting concept.
The dinner ended with the executive chef serving us a cocktail himself (pretty young). It was a shot of lime, honey and whiskey which I thought was done perfectly. A fitting way to end the exquisite dinner.


Done??? Not yet! Since it was Lyn's mum's birthday, the restaurant whipped up a special birthday cake - The Bomb of Alaska. The waiter lit the alcohol and 'bombed' the sides of the cake. A magnificent view, too bad the camera did not capture it.

The cake was simply chocolate ice cream on a crispy bottom topped with cream which is lightly burned on the outside. The texture and taste of the heated cream was exactly like marshmellow.

That truly marked the end of a 2 and a half hour, 12 course dinner. Most of the dishes were simple, prepared with innovative methods and clever use of sauces. Lovely food.

The Jong that never came

A old friend MSN me about a trip to dive Singapore waters. Wondering what is there to see, or can you even see in the murky green waters of Singapore? Well, the average visibility is abt 3m. Check this out http://thebluetempeh.blogspot.com for more information of diving in Singapore.

If he said diving at Pulau Hantu, I would have said no or some other time. But he tempted me with a dive at Pulau Jong. I heard that is the best Singapore dive site and I seldom or never ever heard anyone offering to dive there. Though the price was slightly more expensive than the usual, I was game. Plus I get to dive with very good gears.

All was set till the night before abt 11.55pm, he called and said "Sorry man....logistic error so cannot go. How about next weekend"

Argh, I was pretty hyped to dive cause of the dive site. (I managed to get the diving bug out of me). Sigh....at least I got to watch the world cup in peace.

SMS

I needed to collect my dive logbook from Ping cos I wanted to dive in Pulau Jong (more on that later). So I decided to grab it from her place since I was nearby. Sms her for her address...here's how the sms went

"Tell the taxi XXXX Road. E lane to YYYY place. When you see the word AHEAD, then stop"

So the conversation between me and the uncle driver (and lyn) went like this.
*note the taxi driver is speacking in chinese

Me: "Uncle, XXXX Road. E Lane to YYYY place."

Taxi: "XXXX Road. What is E lane? YYYY place I know."

Me: "My friend sms me that, not too sure also"

Lyn took a look at my handphone.
Lyn: "That is THE lah, not E"

Me: "Oh....stupid Ping"


Moral of the story....when you give directions through text messages, dont use short form.

4 years...

Lucky in uni?

I have always beeen pretty lucky when it comes to university administrations. Manage to secures top 3 choices for my halls (Ahem...with some 'help' at times). Manage to get my perfect timetable almost everytime! I even got an Internship which gave me a decent allowance, though the job sucks.

So when it came to Final Year Project (FYP), I registered without much thought. Given 10 choices, I selected 5 (all hardware) and another 2-3 projects (just in case). The last 2 choices I just selected which ever projects I was seeing on screen at that time. I mean, if the algorithm was to maximise students' top 3 choices and there are TEN choice, I don't think I will get anything below my top 5 choices.

So how lucky am I....

I got my......LAST CHOICE.

I checked, re-checked, triple checked. I kept clicking the refresh button, but nothing changed. I got some project dealing with software programming of a autofocusing system. Well done, I hate software, I hate dealing with anything graphics or fourier transform and my project encompasses both.

I defend myself for making the last 2 choices by selecting whatever is on screen. There are tons of projects to see, 3/4 of which I did not understand what the explaination was about. I was tired and thought luck was on my side. Apparently not! 10 choices and I got the freaking last one!!!

Arghh!

Highs and lows

I missed the session on friday for a trip to the land of the geeks. And I regretted every single second of it. How can that be compared to the every stroke I receive? I miss the orgasmic highs when the right spots are hit. The grunts and the moans..... how could I even think of giving those up for the PC show.

Then came another chance to sneak a session inbetween our busy life. A quicky before the day starts. I had a late night before and struggled to wake up. But the thought of the chase, the game, the play and the high sprung me out of bed.

I changed with a shiver of anticipation. I hurried off to the secret location for the action filled, heart pumping activity.

I was on the bus thinking of what I will be getting later. The thoughts filled me whole and my legs tingle. I wet my lips as I imagined the smashes and the pushes I will be giving.

The phone rang...I picked it up and...

"Eh Ansley....I forgot to bring the tennis balls. Don't think can play liao rite?"

"............."


dammn.

How do you know you are way too crazy abt diving?

"Similan similan similan" = Great dive site, I want to go dive there, Great dive site to a diving addict.


I seriously hope this will fade away with time (I don't foresee anymore diving). I have not been addicted to something so badly since GTA came out on PS2, since Super Mario, since playing better tennis, since....actually since many more things!

Advance dive and a little more

Before I go into a picture galore of my advance diving trip. I shall try to educate my dive buddy. In response to Ping's long entry....there is no fish, its a nudibranch! See the red circle in the first picture! And those corals are called tabletop corals.
So I decided to take my advance diving certification along with some leisure dives. That should give me enough diving to last me till end of the year. Diving is darn expensive, but worth a try. This time I took the bus/ferry route. Oh my, 4 hours in a van and 4 hours on a ferry to the island is no joke. It really tested my conviction to continue diving. We even had to give a welcome 'gift' to the Malaysia Policemen who stopped us for no apparent reason. Perhaps there is a rule that a 8 seater van can only have 6 people?

We stepped onto island at 5am, dragged ourselves to the room to get some proper rest. The only good part of it all, the rooms are much better than the Live onboard.

Welcome Pulau Dayang, hello sunshine and sea! We had some time to play beach volleyball. I think it was JC since I last played this game? We could have won the game, but I had a "STAR PLAYER" in my team, who also happens to be my dive buddy.

This shell thingy was moving slowly while we were doing our night dive.

See the black fishes....they were TINY!!! Some where even about half a centimeter.

This is a nudibranch I see pretty often that it is no longer a novelty. There thosands of different spieces and more are being discovered. Fact:They are carnivorous! Fact:They are often molested by ping.
Lobster....
Clown fish aka Nemo. They are everywhere, but you don't often get two looking straight into the camera. Say CHEESE!!!Here is the best shot taken by a new Underwater photographer. It was during the night dive and clever use of the torch to hightlight the starfish.


Below are underwater photos I took from alvin. He is a serious underwater photographer. He has a big stobe with a very good digital camera. Coupled with lots of diving experience, you can see the difference in picture quality.

Yellow-tailed barracudas. I saw a big school of it went I was doing my safety stop at Rayner's Rock. Pretty surreal!
Flabellina looks a little like dragon. I saw a couple of these during my dives. Lovely!
White-eyed Moray eel. I even got a chanve to take pictures of it, but my instructor has not sent me what I took. The eel I saw was up a huge coral formation. So I had to float in the middle of nowhere to get the pictures. Why was I so stable? Cause Ping was so excited she literally grab me and force me to take pictures of it. Scorpion fish...saw a few of these too. Very well hidden critter!

Nudibranch, the exact same kind that ping tormented during our basic open water course!
This has got to be my favourite finds during this trip. Saw the juvenile yellowbox fish twice durin g the trip. It is abt 2cm only. Scuttering around here and there. It is very hard to get a clear look at it! Everytime I see this photo, I feel like squishing it! haha!
Hermit crab also known at junction 8 as HAHA crabs. They are actually selling hermit crabs for $40. I think I should catch some back and start my own! And the hermit crabs I see in the water a HUGE compared to those at j8!
Barred moray eel. I saw this fellow too. Well hidden under a flat rock with only a small opening. Just so happen I decided to peek into that hole and VIOLA! But it was pretty shy, did not shoot out like the picture below!
Here is the whole group, bunch of leisure divers, open water students, 4 advance students, Dive master trainee and instructors. Very fun group, filled with snacks, drinks, vollyball, chats and jokes.

The guy in white is my instructor. 4 of us took the advance open water course. The jap girl is sleeping I guess. She has this ability to sleep anywhere. She will just plonk herself somewhere and knockout, even better than me! I must say that Jap girl is very interesting. She had already bagpacked central USA, Australia and decided to stay in Singapore after a short trip over here.

Ypu must be wondering if Ping poked, molested anymore critters this time round. The below picture says it all.

Ping is a little more careful now since she got bitten the last time round which led to 50 antibiotics and a jab. Without a pointer and gloves, she resorted to using her Fins to "lightly" touch the creatures (lightly is what she use to justify her actions). During night dives, she will use her torchlight as the pointer. Jabbing anything that interests her. She was so excited when she saw a turtle, she practically almost hung onto its shell! *smacks forehead*

All in all, it was a lovely trip other than getting drifted away from my instructor who was tending to the jap girl. I still don't agree with my instructor's way of handling the situation. But that is another story for another time. (Dammn tired already)

Check out the food that I was raving about. There was more food on the other table and a pot full of curry! Yummy!!! The food was good for every meal, so good that Ping had to gorge 3 prata and curry chicken for breakfast.

Long last...

I finally went for my open sea dive. I am a certified aquaman! Now I know why Aqua ASS is so addicted to it. I want to go back to the sea, give me gills so I can stay in the water.

I started my diving experience by being pampared with a Live onboard. Sat on MV Seabourne all the way to Dayang. Lovely experience, no hassle of changing bus and ferry. The food was VERY VERY good. The capt and cook is this guy by the name of Ah Koon (or Ah Goon). He can really whip up really good dishes. Thou he seem to occassionally under cook the chicken. Food, snacks and entertainment was plentiful. (To think I thought diving can help me lose weight, in the end... I gained some weight)

I did not need to dive to see fishes, the water was so clear....I can see the fishes swimming ard when I was on board. Saw a turtle too before I even went down for my first dive. How clear is the water? I spotted a blue spotted sting ray clearly (abt 10m) when I was playing with the snorkle on the water surface.

When you first descend, the feeling of awe just overwhelms you. I feel a certain sense of peace and then suddenly no marine life seems scary. I guess AquaPing took that feeling a little too seriously. She must be lying when she said she is scared of fishes, cause when she was a TERROR. She kept touching everything in her sight. The pool little nudibranch was molested by her REPEATEDLY. The worst is she does not have gloves. She fiddled with the sea cucumber, kept playing with the coral ferns. Basically thought she was invincible. I swear she would have touched the stonefish we saw if it was closer to her. The best part of it all, I showed her the picture of the Crown of Thorns (at Jawa), the joker almost went to touch it before the divemaster smacked her hands away. *roll eyes* Ichthyophobia my foot!!! Don't say I never warn you, Fire corals do pack a mean punch!

I had a opportunity to do a night dive at Sebukong, which was an eye opener. The world down there has a totally different feel when it is night. Somehow the sea urchins are out in full force at that time. Reef crab, pufferfish, sea slug, big nudibranch, sleeping fishes...and plenty more which I can only describe as fishes, big fish, ehh...coloured fish?

I missed out a lot of things too, the leisure divers got attacked by triggers, saw the coneshell, crabs and even shrimps. My instructor saw the shape of a nurse shark when we were at pulau yu (Yu in malay means shark). I want to do a leisure dive, just so I can take my time to check out the little things I missed.

Jet rock and Pulau Yu was the leisure dive we did before we left for Spore. The currents were pretty strong and the visibility was probably abt 4-5m. A totally different experience with such conditons. Really had to play with the bouyancy just to get real close to the reefs without stiring anymore sediments. Just my luck as the divemaster told me that the 2 sites actually have really good visibility if the conditions were right. If you are at Jet Rock, do not touch anything which looks foreign, they use that place for live firing! hahaha!

The journey back was filled with naps, movies, beer, wine and chips. That is life....

I have a nitrogen hangover!!! I need more!!!
